Changing Syntax Highlighting Categories

Hi,

I'm using jedit for editing latex with the german language package. This package uses quotation marks for special charachters and so jedit's syntax highlighting interprets much of the text as LITERAL1, although this is not intended to be so. Is there a way of switching off syntax highlighting just for LITERAL1? How can one generally individually define syntax highlighting (not only the colour, but also when things should be marked in this colour)?

Edit Mode

Create a new or edit the existing edit mode. There is amongst other things defined what is to be syntax highlighted.
How to make edit modes is covered in the jEdit User's Guide in the jEdit Help and you have enough examples in the modes-directory
 
Changing Edit mode without effect

I am trying to do exactly the same, but editing the edit mode does not have any impact on the syntax highlighting. Even deleting all tags from the edit mode tex.xml does not change anything, even not after "Utilities > Trouble Shooting > Reload Edit Modes".

Is there a global default syntax highlighting? And how to overwrite it. I read the Chapter 10, "Mode Definition Syntax" of the User Guide but still don't see it.

I confused tex.xml and latex.xml edit modes because in the dialog for choosing the edit mode for a buffer only appears tex for both of them.
Changes on latex.xml do have an impact on the syntax highlighting.
